MIND Diet Brain-Healthy Bites: Herbed Baked Chicken

This MIND Diet-inspired recipe comes from Memory and Aging Program Outreach Coordinator, Lorrance Saraiva . Chicken is a heart- and brain-healthy lean protein and is a great source of vitamin B. Combined with the olive oil and cinnamon, this recipe is packed with brain healthy nutrients and lots of great flavor! 

Ingredients:

  • 1 package of chicken tenderloins
  • 1/2 cup apple cider vinegar
  • 1/4 cup olive oil
  • 1 cup garlic and herb marinade
  • 1/2 cup Italian dressing
  • 1/2 tsp cinnamon
  • 1 tsp paprika
  • Black pepper to taste

 

Instructions:

  1. Combine the garlic and herb marinade, apple cider vinegar and Italian dressing, add chicken to the mixture and marinate in refrigerator overnight. 
  2. Remove chicken from marinade. 
  3. Combine the cinnamon, paprika and black pepper then sprinkle onto both sides of the chicken.
  4. Grill or bake chicken to an internal temperature of 165 degrees.
  5. Once 165 degrees is reached broil chicken to a golden brown.
