MIND Diet Brain-Healthy Bites: Cod with Kalamata Olive Topping

Corinne RomaThis MIND Diet-inspired recipe comes from Memory and Aging Program Research Assistant Corinne Roma. Fish is high in omega-3 fatty acids, making it both heart-healthy and brain-healthy. The olive oil, olives and vegetables pack an additional brain-healthy punch as well.

Ingredients:

  • 2-3 Cod Filets
  • 3 tbsp. avocado oil or olive oil
  • 3 navel oranges
  • 1 1//2 tbsp. balsamic vinegar
  • 1 8.8 oz. pkg precooked beets, cut into wedges
  • 5 oz. fresh baby spinach
  • EVOO
  • 1 Lemon
  • Roughly ½ Cup Pitted Kalamata Olives *

 

Instructions:

  1. Preheat oven to 400F. Generously salt and pepper fish filets on both sides, drizzle with olive oil, place in preheated oven for 10 minutes.
  2. While fish is baking, dice tomato and olives into similar sizes. Roughly chop parsley and toss together with the olives and tomatoes. Drizzle with olive oil and dress with lemon to taste.
  3. Plate the fish, top with a generous amount of topping, and enjoy!
* The amount of tomato and Kalamata olives together should be enough to top however much fish you have, the amounts listed are rough estimations)
