MIND Diet Brain-Healthy Bites: Avocado Almond Oatmeal
This MIND Diet-inspired recipe comes from Memory and Aging ProgramNeuropsychologist Athene Lee, PhD. Oats are full of vitamins B and E, making it "the grain for the brain". The olive oil and almonds add additional brain healthy choices to complete this dish.
1/3 cup quick cook oatmeal
1/2 of an avocado, sliced
handful of almonds, toasted whole, crushed or sliced
1 organic egg
1 tbsp condensed milk
2 cups cold water
olive oil, salt and pepper to taste
Add oatmeal to the 2 cups of cold water, sprinkle with salt and cook for 1 - 2 minutes.
Add egg to the hot oatmeal, cook for 1 minute then stir in.
Add condensed milk to a mixing bowl and spoon cooked oatmeal in.
Top with avocado slices and almonds.
Drizzle with olive oil, add salt and pepper to taste and enjoy!
